we’re tyler and kristine, the pair behind hi gluten. we’re a tiny operation working out of our home in southeast Portland focused on bringing quality baked goods to our community.
tyler’s been working across the country as an artisan bread baker for nearly a decade focusing in naturally leaved and long fermented yeasted breads. with nearly a decade of experience, tyler's passion for artisan breads is evident in every loaf he makes. he strives for exceptional craftsmanship and flavor in every bite.
kristine graduated from the University of Oregon with an MBA focusing on sustainable business practices. she’s also worked as a barista and cafe manager at a coffee shop in Washington, D.C.
her knowledge and commitment to sustainable practices greatly influence the bakery's values, ensuring that hi gluten delivers delicious bread to its community with an eco-conscious mindset.
